I cannot believe it’s been almost a month since I last wrote about food (my one true love). It’s certainly been a transition and I think you can see that in the food I’m eating too! So let’s dive right in!


Casey and I both really enjoy sushi (but not the price tag), so when we decided we were going to go out we thought it would be nicer to have one or two more expensive date nights per month. We went to Mikoto Steakhouse and sat at the sushi bar. Definitely a place we’ll have to come back to.

While Casey was out of town last week, I did the grocery shopping and saw this frozen crab-stuffed salmon in a set of two that were on sale. Delicious seafood and on sale? Yes please! I baked for 20 minutes and it was delicious. I also cooked some tomatoes we had as leftovers from something earlier in the week with some spinach. I really really really like cooked tomatoes.
I also feel like whenever I eat mac and cheese I need to have twice as much spinach because since it’s so good it must be so terrible. Pair with chicken breast for the most delicious meal.
